When I lived in Chicago, my friends & I had this awesome tradition of always meeting on Monday nights at one of our favorite restaurants for their drink/food specials. I always looked forward to our gatherings & one of my favorite things on their menu was their Taco Pizza. Then madness happened, the menu changed & my favorite dish was gone. GONE. Such a travesty.
So in an homage to one of the most tasty pizza I've had, I tried to recreate it...yet in a much healthier way. J was a tad skeptical when I told him what I was making, but once he tried it, he LOVED it. I did cut some corners such as buying pizza dough crust because I wanted something easy & I succeeded. What's awesome about this dish is you can totally modify the ingredients to what YOU prefer. The portions though of each ingredient have been modified from what you see in the pics since this was a big trial & error dish. Anyways, enough is enough...MAKE THIS.

How difficult was this for me? Not hard at all!
1 pre-made wheat pizza crust (yes, I cheated)
1/2 lb ground turkey (if possible, taco pre-seasoned, if not, add one pkg of taco seasoning)
1/2 medium yellow onion, chopped
3/4 - 1 cup shredded low-fat mexican cheese
1 avocado, chopped
1/4 cup black olives, chopped
1 cup shredded lettuce, I used the iceberg/romaine we had so it wouldn't go bad
3/4 cup salsa of your choice, I used a corn & black bean medium salsa
Taco sauce to drizzle
*Note, I actually made 2 pizzas due to the awkward amount of ingredients needed for one pizza. I mean, who has just 1/2 a pound of ground turkey hanging around? The recipe above is for one pizza.
In a large skillet, brown ground turkey (add seasoning if necessary)
Once meat is brown, add chopped onion. Cook an additional 2-3 minutes until onion is soft.
Remove from heat & set aside.
Place dough on greased tinfoil lined baking sheet.
Pour salsa as you would normally with tomato sauce. Spread evenly leaving an inch around the edges
Spread meat/onion mix evenly over salsa
Spread cheese over meat, making sure to fully cover the meat
Place olives on tip of cheese
Place pizza in oven for approx. 20 mins or until cheese is completely melted.
Remove from oven, spread lettuce then avocado on top.
Drizzle with taco sauce
Slice & serve. Enjoy!
