{Recipe} Funfetti Sugar Cookies


Happy Monday! What better way to start the week than with something sweet? So, a few weeks ago one of our friends decided to plan a camping trip for his birthday. We went to Two Harbors at Catalina Island.  It was "camping" in the sense that we slept in tents & built a fire & made food over a camping grill but we also went into town & had lovely mixed drinks at their bar & ate dinner at their restaurant. So it was sort of camping.  Anyways, I wanted to bake something for our friends birthday & since I couldn't exactly take a cake, I thought cookies inspired by cake would be a fantastic substitute. AND THEY WERE.  These cookies were SO awesome! I mean, they are funfetti...how can you go wrong?! They are soft, gooey & SO easy to make!  Thank you BIG TIME to Cookies & Cups for the delicious recipe!






Makes: Approx. 30 cookies
Bake/Prep Time: 30ish mins (plus 1 hour for dough to chill)
How difficult were these for me to make? Not bad at all!

8 oz light cream cheese, room temperature
1/2 cup butter, room temperature
1 egg
1 box Funfetti cake mix
1/4 cup sprinkles
1/4 cup powdered sugar


In a bowl, beat cream cheese & butter together until smooth




Add in egg & continue mixing, scraping down the edges as necessary


Add in cake mix & beat until evenly mixed in. Stir in sprinkles.



Chill dough for 1 hour.

Preheat oven to 350 degrees

Form dough into 1 inch balls, then roll balls in powdered sugar.


 Place on greased baking sheet 2" apart

Note, the longer the balls sit, the powdered sugar will start to dissolve into the dough. Totally normal!


Bake for approx. 10 mins


Let cool then serve! Make sure to store in the fridge.
