I'm always on the hunt for easy weeknight meals that won't destroy my kitchen & are somewhat healthy. I've made Oven Baked Chicken Fajitas MANY times so I thought I'd switch it up & substitute the chicken for steak. It was a GREAT idea if I do say so myself. However, there were a few things I'd do differently next time. First, I bought pre-cut "stew" steak. While it was good, it was cheap…& therefor not as tender as I'd prefer. So I think next time I'd spend a few extra bucks & buy either skirt steak or flank steak. I also noticed the steak does't absorb the marinade as easily as chicken, so if you have the time, I'd marinate the meat overnight. If you don't have the time, follow the recipe below. Overall though, I REALLY like this recipe & will definitely make it again with the changes. Do you have a favorite cut of tender steak? I'm all for ideas!
Serves: 8 Fajitas
Cook time: 40 mins, however, if you have time, I recommend marinating the steak overnight
How difficult was this for me? Pretty easy!
INGREDIENTS
1 lb skirt steak (or flank), cut into strips2 tbsp olive oil
4 tsp chili powder
4 tsp cumin
1 tsp garlic powder
1/2 tsp salt
1 red pepper, seeded & sliced
1 green pepper, seeded & sliced
1 medium yellow onion, sliced
8 small flour tortillas
Light sour cream if desired
Mexi cheese blend if desired
*Note: If you can marinate overnight, you will need quadruple the amount of olive oil, chili powder, cumin, garlic powder, salt.
If marinating overnight, in a small bowl, place TRIPLE the amount of olive oil, chili powder, cumin, garlic powder & salt.
So, that'd be: 6 tbsp olive oil, 12 tsp chili powder, 3 tsp garlic powder, 1.5 tsp salt. Drench steak slices in marinade. Make sure to really massage the marinade into the meat.
Place meat into a ziploc bag & get rid of as much air as possible. If you have extra marinade, dump it in bag. Let meat sit overnight.
If you can't marinate overnight:
Preheat oven to 450 degrees
In a small bowl, combine chili powder, cumin, garlic powder, salt. Mix well. (If you marinated overnight, still do this step with the original quantities listed above.)
In a greased 9x13 baking dish, place strips of steak. Drizzle 3/4 of marinade over meat & mix well. Yes, I did this wrong. I added everything in the pan, then drizzled the marinade. Ignore that.
Add veggies in & drizzle rest of marinade over veggies. Please ignore my purple onion, I was really lazy cheating & bought a pre-cut veggie fajita mix.
Bake uncovered for 20-25 mins, until meat is cooked thru.
Place meat/veggies in tortillas, top with desired toppings & enjoy!
