Yes, you read the title correctly. I'll admit, I was a bit intrigued, a bit grossed out. But the intriguing part of me won & THANK GOD for that! This pasta dish was delicious, really healthy & easy to pull together. The pumpkin flavor is actually pretty subdued, which I was disappointed in. But the use of turkey sausage, spinach & a touch of parm really pulled it all together. I decided against my better judgment to use wheat noodles & my thighs were actually thankful. This is definitely a great go-to meal for weeknights as it took under an hour to prepare. J & I personally indulged this past Sunday night while starting House of Cards Season 3. We're only 7 episodes in, so NO SPOILERS! Anyways, I definitely recommend making this dish. Big thanks to Green Lite Bites for the recipe!

How easy was this for me? Not bad at all!
1 medium yellow onion, chopped
3 cloves of garlic, diced or minced
1 pkg mild Italian turkey sausage (5 links), sliced (see note for tip)
1 15oz can chicken broth (I might try using 12 oz to give more of a pumpkin flavor next time)
1 15oz can pumpkin
1/4 cup non fat greek yogurt
1 tsp ground sage
1/8 tsp ground nutmeg
1/4 tsp kosher salt
1/4 tsp fresh ground black pepper
16 oz whole wheat fusilli pasta
1/3 of a bag of fresh baby spinach, one giant handful
Note: I recommend freezing the turkey sausage links. Then simply remove from freezer, microwave for 1 minute & then slice. This is the best trick ever to slicing sausage!
Bring large pot of water to boil, then cook pasta according to package directions.
While the pasta is cooking, in a large skillet over medium-high heat, brown turkey sausage, onion & garlic.
Once the meat is FULLY cooked through, add chicken broth & bring to a boil.
Once boiling, reduce heat to medium. Add in pumpkin, yogurt, nutmeg, sage, salt & pepper. Mix thoroughly.
The Greek yogurt didn't mix too well for me. I could see specks in the sauce, but it still tasted great.
While leaving on medium heat, bring to a boil. Then let simmer.
By this point, your pasta should be done or close to. Once ready, add in noodles. Mix thoroughly.
Then, add in spinach. Let cook for approx. 5 mins until spinach becomes tender.
Remove from heat. Serve in bowls & sprinkle parm to serve.
