There isn't anything that screams summer more than grilling outside on a beautiful night. Well let's be real...I don't grill. I sit and watch J grill...but that counts right? Besides being a DELICIOUS meal, I loved being able to spice things up from our typical grilling of burgers/sausages/chicken/. This was a really nice change!
I also really love when meals are customizable. I am way picker than J so I appreciate when he can add things to his meals that I wouldn't normally serve in the dishes I make. When I saw the recipe on "Point-less Meals" had avocado in it, I was completely sold. The hardest part of this meal was really trying to take a decent taco picture. If anyone has suggestions, please send them my way.
Flank Steak Tacos
Serves: 4
Cook time according to Rachel: 3 hours (2.5 hours to marinate the meat)
How difficult was this for Rachel? Easy!
1 2lb flank steak
8 tortillas
Rub:
2 tbsp olive oil
1 tbsp paprika
2 1/4 tsp cumin
2 tsp brown sugar
1/2 tsp cayenne pepper
3 garlic cloves, minced
salt & pepper
Toppings (all optional but we used):
2 avocados
2 tomatoes
4 cheese Mexican blend
taco sauce
Directions:
In a large bowl, combine all ingredients listed under the rub above. Mix well.
Note: This recipe has a small kick to it so beware when making the rub.
Cover the meat completely on both sides in the rub.
Place meat in tinfoil & cover with any leftover rub in the bowl. Refrigerate for 2 1/2 hours.
Grill the steak to your liking.
I prefer my meat cooked medium well & J prefers rare...so we met somewhere in the middle. |
Slice the steak into cubes.
Make your tacos!
