Cold Crescent Veggie Pizza


One of my closest friends is a vegetarian, however, everyone else we hang out with loves meat.  J & I often have friends over for BBQs (ahh the joys of living in a warm climate) and I always want to make sure she is taken care of when she's over. This is an AWESOME solution.  The soft dough of the crescent roll on the bottom combined with the crunchy veggies on top...delicious & light. I'm not really sure where this recipe comes from, but I got it from my sister.  I've made this for parties & tailgating & it is ALWAYS a hit. Have I mentioned it's easy & barely takes any time to assemble?? My kind of dish!

INGREDIENTS
2 pkgs crescent rolls
1 pkgh Hidden Valley Ranch seasoning
1 cup light mayo
1 pkg sharp shredded Cheddar Cheese
1 green pepper, chopped
1 red pepper, chopped
1 cup baby carrots, chopped
1 cup broccoli, shredded

DIRECTIONS
Preheat oven to whatever Crescent Roll packaging says.
Roll out crescent roll to completely cover greased cookie sheet.
Bake according to instructions.
Once dough is golden brown, remove from oven & let cool.
In a medium mixing bowl, combine cream cheese, Ranch seasoning & mayo until thoroughly combined.
Spread on top of cooked dough.
Sprinkle veggies & cheese on top of ranch mixture.
Slice & serve!
