Chocolate Chip Cookie Dough Cookie Sandwich


Yes. Yes. Yes. What a fun and easy dessert. Who doesn't LOVE cookie dough?!!! Best part of this treat is the "cooke dough" doesn't have any eggs so it is perfectly safe to eat raw. Yum!!  Unlike the No Bake Cake Batter Truffles, this dessert I did actually put out for our guests at J's bday party and they were GONE so fast. Thank you Two Peas in Their Pod for this fun alternative to the typical chocolate chip cookie.

Chocolate Chip Cooke Dough Cookie Sandwich
Makes: Aprox 20 sandwiches

OK, so I cheated the ingredients a bit. I used Pillsbury cookie dough to make the actual chocolate chip cookies simply because it was easier and I didn't have the time. If you want to make the cookies from scratch, check out Two Peas in Their Pod website. The cookie dough filling ingredients listed below.

Ingredients:
                                                   
2 rolls of pre-made cookie dough
1/2 cup unsalted butter, room temp
1/2 cup light brown sugar, packed
1/4 cup all-purpose flour
1/2 cup powdered sugar
1/4 tsp salt
1/4 cup heavy cream
1 tsp vanilla extract
1/2 cup mini semisweet choc. chips
cooking spray


Directions:


Bake cookies according to directions on packaging.
Tip: Flatten the dough balls just a bit and make sure cookies are well spread out on cookie sheet

While cookies are baking, assemble the cookie dough:


In a large mixing bowl, beat the butter and brown sugar together until light and fluffy. What you see above is NOT light and fluffy. I used a wooden spoon to smooth it out a bit.


Mix in flour, powdered sugar, and salt until incorporated. Slowly add heavy cream and vanilla and beat until fluffy.


Stir in chocolate chips. If cookie's still aren't done, refrigerate dough.


How yummy does that look!!!


Once cookies are completely cool, spread aprox 1 tbsp of dough between two cookies. 


Once all sandwiches are assembled, store in the fridge until you chow down.
