{Recipe} Comfort Casserole

Sometimes after a long day at work, I just want something hearty and comfort-y.  This was the dish! Thanks to my friend Erica who introduced me to a new blog, Reservation for Two, this recipe will become a new staple in our rotation.  What I love about this blog is each recipe is meant for 2 servings plus some leftovers.  This particular dish lasted us 2 nights. It was perfect! So many times I end up making these recipes that last us 4 days...and I don't care how good something is,  after eating it continuously for that long, it gets old.  I'm looking forward to exploring this blog some more!

ABOUT:
Serves: 2 + leftovers
Cook time according to Reservation for Two: 50 mins
Cook time according to Rachel: 1 hour (my stove top is SLOW)
How difficult was this for Rachel? Pretty easy!

INGREDIENTS
2 cups pasta noodles, cooked
1/2 lb lean ground turkey
1/4 sweet onion, diced
1/2 green pepper, diced
1/2 cup milk
1 cup shredded cheddar cheese
1 can fat free cream of chicken soup
1 cup bread crumbs
salt & pepper              

DIRECTIONS

Preheat oven to 350 degrees
In a large skillet, add ground turkey, onion & peppers. Break down the meat into small pieces. Cook until meat is browned and cooked through. About 10 minutes.

     
Add cream of chicken soup, milk & cheese. Heat on low until cheese is melted, stirring occasionally.
Add cooked pasta to soup mixture and stir until noodles are evenly coated.
Transfer to a small baking dish. Sprinkle bread crumbs on top. 
Cover with aluminum foil and place in oven for aprox 30 mins. 
Serve immediately!

  1. Casseroles are pretty much my favorite thing ever! I will definitely be making this one and lots more of your recipes. I'll have to use your site to help me make shopping lists. ;) Great job Rach!!

  2. This sounds yummy! I like the idea of making smaller portions. Matt seems to have a grudge against leftovers, so I usually end up eating them all, and I get sick of the same food day after day! :)

    And that breakfast bake you made a couple months ago has become a staple for us on the weekends. :)
