For quite some time I have been saving up breakfast recipes, but I've never had the right weekend to sit down and actually make something. This past weekend J was swamped with work, so this would be the perfect opportunity to get in the kitchen. I was planning on going to the store Saturday night (really exciting right?!) but then I got lazy, mistake #1, and decided I would go the following morning, mistake #2. So I got up decently early for a Sunday and took Duke out for a quick walk. Wouldn't that be our luck that every dog in the complex was outside. 90 minutes later, an exhausted Duke and I finally returned home. I ran off to the store in hopes that it would be a quick trip, mistake #3. Everyone and their mother was at the store. I finally got home and realize it is already 12:30pm. J was still game for brunch, so I set off into unfamiliar territory. 90 minutes later we finally sit down to eat, and it was SO worth it. I stuck to the recipe (substituting pork sausage for turkey sausage, 2% milk for skim and regular cheddar for fat free) but you could easily add veggies and skip the meat. Steph at Plain Chicken made this recipe the night before and then threw it in the oven for an hour the next morning. I will definitely take this advice next time so we aren't eating brunch at 2pm.
Egg & Turkey Sausage Bake
Serves: 4 w/ leftovers (hello breakfast for the week!)
Cook time according to Steph: 1 hour of baking time, but no prep time listed
Cook time according to Rachel: 1 hour 20 minutes
How difficult was this for Rachel to make? Easy!
1 lb turkey sausage
1 cup Bisquick
1 cup shredded cheddar cheese
2 cups milk
1 tsp ground mustard
1/2 tsp dried oregano
6 eggs, slightly beaten
Directions:
Preheat oven to 350 degrees.
Cook turkey sausage in a skillet over medium head, stirring occasionally. I chopped up the patties to make this easier.
Once sausage is cooked, drain and combine with the rest of the ingredients in a mixing bowl. Mix thoroughly
Pour mix into a greased casserole dish. I sprinkled a bit more cheese on the top because who doesn't love more cheese?
Bake for 1 hour. Enjoy!
