Mmm chicken...and I just rolled my eyes at myself. After gorging on Creamy Macaroni & Cheese for 2 days, and knowing the 4th was coming, I figured a simple chicken & brown rice dinner would be a smart idea. I found this recipe on Let's Dish Recipes and after seeing their delicious looking picture, I was sold. However, while my stomach was hungrily responding to the picture (see below), my brain forgot that I don't entirely love mustard. If you don't like mustard, don't make this recipe.

Overall, it was super simple and quick to make. But, when something is simple, my brain tells me I know what I'm doing. Let's just say it was a MIRACLE J didn't get food poisoning due to some undercooked chicken. Note to self, check BOTH pieces of chicken before serving.
Chicken with Mustard Cream Sauce
Serves: 2

2 boneless skinless chicken breasts
1 tbsp olive oil
1/4 cup chicken broth
1/2 cup heavy cream
2 tbsp Dijon mustard
1 tsp dried tarragon or oregano (I used oregano)
salt & pepper to taste
Note: minus the chicken, the recipe above is for 4 pieces of chicken. I made the extra sauce because it was recommended. Eh, not sure you really need all that sauce.
Directions:
Add olive oil to skillet and preheat over medium-high heat. Season chicken with salt and pepper. Add chicken to skillet & sauté until COOKED through 10-12 mins, turning once. Transfer to a plate and keep warm.
The recipe calls for adding in the chicken broth without draining out the cooking oil. Well, it looked gross, so I drained the skillet before adding in the broth. Once broth has been added, whisk in cream, mustard and oregano. Cook and stir for about 2 minutes. So I had to use a wooden spoon bc my whisker was preoccupied in the washer...and my sauce didn't come out as thick. Make sure to whisk and not just stir. Pour over chicken & enjoy!
I love the addition of the dijon mustard and oregano. This must taste great!
