Taco Salad with a Kick


Looking to spice up our regular taco dinner, this salad seemed to be the perfect solution. This also made me realize that while I have lots of serving platters, I didn't really have a good selection of bowls. Bring on Crate & Barrel. I left with the 5-Piece Parker Bowl Set and am SO in love. I also left with 4 of these in different colors. Just couldn't help myself. Anyways, the salad. I found this recipe at Taste of Home. I made a few slight modifications and will definitely be making this again!

Taco Salad with a Kick
Serves: 4 (as a meal)
Cook Time according to Taste of Home: 30 minutes
Cook Time according to Rachel: 35 minutes!
How hard was this for Rachel? Easy
(This is something new I think will be helpful in determining how difficult a recipe is without having to read through the directions)



Ingredients:

1lbs ground turkey
1/2 cup ketchup
1 tsp dried oregano
1tsp chili powder
1/2 tsp salt
1/4 tsp pepper
1 medium head iceberg lettuce
1 cup shredded Mexican cheese blend
1 can (2.4ish ounces) ripe olives, drained
1/2 cup light mayo
1/4 cup taco sauce
1 pkg (10ish ounces) chips
(May I recommend the Tostitos Artisan Recipe. AMAZING)
Optional items:
2 medium tomatoes, chopped
1/2 cup jalapeno peppers


Directions:


In a large skillet or sauce pan, cook turkey over medium heat until brown. Drain. Stir in ketchup, oregano, chili powder, salt & pepper. Bring to a boil. Reduce heat, cover & simmer for 10 minutes.

                           

While meat is simmering, chop lettuce. In separate bowl, combine mayo & taco sauce. Mix thoroughly. 

           

In large bowl combine meat mixture, cheese, lettuce, olives & any additional items. I served olives & peppers separately for J. Recipe calls for mixing in dressing. I found the recipe makes a LOT, so better to serve on the side and add as necessary. Enjoy!
