Stuffed Green Peppers Crock Pot Style


I was all excited when I found this recipe on Pinterest (duh) because I thought it was something unique, healthy and contained all the foods that J loves. I've never had stuffed peppers before and before Pinterest, had never heard of them.  I decided to make them this past Monday because Mondays suck and a delicious meal is just what one needs. So J comes home after work, walks right over to the crock pot and says, "Stuffed peppers!!! My mom makes these all the time!" Well, so much for being unique. Anyways, these are pretty tasty on day 1. I was afraid to reheat these suckers for fear of turning them into mush, so I decided to eat my 2nd one cold. Do yourself a favor, reheat the leftovers.

Stuffed Green Peppers
Serves: 4 peppers
Cook time according to Mark: 8-10 Hours
Cook time according to Rachel: 8-10 Hours
How hard were these for Rachel to make? Pretty easy

Ingredients  

1 lbs ground turkey
4 large green peppers
2 large carrots (I used baby carrots)
1 large onion
4 cloves garlic
6 ounce can of tomato paste
1 tbsp dry oregano
salt & pepper to taste

Recipe also calls for 1/2 head of cauliflower but I skipped that.


Directions:


                    

Cut the tops off the peppers and clean out the inside. Probably a better term to describe that, but whatever.

                     

Chop the onion, garlic & carrots and put in a big mixing bowl. If you use baby carrots, I chopped up about 20.

                     

Add in the meat, tomato paste, & oregano to the vegetables. Mix thoroughly. Stuff each pepper with meat mix. Place peppers next to each other in crock pot. Add in leftover meat around the sides of the peppers. Pour 1/2 cup water over entire pot. Place tops of peppers back on top. Cook on low for 8-10 hours.
