So, these exist. I was super skeptical because I take my chocolate desserts seriously, but damn these are AWESOME. Super gooey and chocolatey, I wanted to lick the pan clean. The diet Coke replaces the need for egg & oil. They don't taste like a "healthy" dessert at all, YET there is only 115 calories a brownie! Big thanks to Kelly over at Eat Yourself Skinny for these. Good luck eating just one at a time.
Diet Coke Brownies
Serves: 14-16 depending on how big you slice them
Cook time according to Kelly: 55 mins
Cook time according to Rachel: 55 mins

Ingredients:
Yep, that's it. (only need 12oz of diet Coke)
Directions:
Preheat oven to 350 degrees (check the directions on your brownie mix) In a large mixing bowl, combine brownie mix and diet Coke. I recommend using a mixer to stir out all the lumps. I tried using a wooden spoon but the caffeine in the coke made it hard to tell if the mix was smooth.
In a greased 9x9 baking dish, pour the mix. You will notice the mix is much thinner than normal brownie mixes. Most brownies require 40-45 minutes in the oven. These will require an additional 5-10 minutes to be able to stick a fork in the middle and have it come out clean.

haha I only started a few months ago as my attempt to learn to cook! I figure if I blog, then I am obligated to keep cooking. I also whore it out on FB and I know you aren't on there a lot. These brownies are AMAZING. Just make sure to bake a little longer....we were eating them with a fork bc they were so gooey, but SO good! Miss you!
