The inspiration behind this loaf came simply from the fact that I had a few bananas that were going brown that I refused to eat (I'm sorry, they looked gross)...but I also didn't want to throw them away. What else could I do with them besides bake banana bread? I enjoy banana bread...but throw in some chocolate chips and I'm sold. Looking for a healthier recipe, I stumbled across 8 Weeks to a Better You. The recipe substitutes apple sauce for oil & honey instead of brown sugar. It is pretty damn tasty and best when served warm.

INGREDIENTS
2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
2 eggs, beaten
3 overripe bananas, mashed
3/4 cup honey
Pam
1/2 cup chocolate chips
1/2 cup sugar free honey
(which got cut out of the picture. Whoops)
DIRECTIONS
Preheat oven to 350 degrees.
Lightly grease 9x5 inch loaf pan.
In one bowl mix apple sauce & honey.
Add in beaten eggs & bananas.
Mix/mash bananas until smooth. I recommend using a mixer otherwise this will take a while.
In a separate bowl combine flour, baking soda & salt.
Then add to the banana mixture.
Add in chocolate chips and stir until evenly mixed in.
Pour mix into greased loaf pan.
Bake in pre-heated oven for 60 minutes.
Insert toothpick or fork in center and remove. If toothpick/fork comes out clean, bread is ready.
