Unlike most kitchens, chicken is not something I make often. I find it slightly boring and not a food I often crave. When I came across this recipe on Pinterest, I was actually excited to try it. It is a bit complicated, but absolutely delicious. Credit for this homemade Chinese dish goes to an awesome new blog I found, SixSistersSuff. I will be trying more of their recipes. I also tried a new side, "Chinese Buffet" Green Beans.

4 boneless chicken breasts
1 cup cornstarch
2 eggs, beaten
1/2 cup olive oil
3/4 cup sugar
4 tbs ketchup
1/2 cup vinegar
1 tbs soy sauce
1sp garlic salt
salt & pepper to season
DIRECTIONS:
Preheat oven to 325 degrees.
Cut chicken into cubes & season with salt & pepper
Dip chicken into the corn starch and coat completely. Use a fork and then dip chicken into egg. Place coated chicken on plate. Repeat for all pieces of chicken.
Heat oil in large skillet. (Something I need to purchase, I had to cook 2 pieces of chicken at a time) Cook chicken until slightly brown - do not cook chicken all the way through.
Place chicken in greased baking dish.
In a medium mixing bow, mix sugar, ketchup, vinegar, soy sauce and garlic salt.
Pour evenly over chicken.
Bake for one hour. Make sure to rotate chicken every 15 minutes. Let cool completely. Serve with rice & enjoy!
